Corn on the Cob Gets Dressed Up For Dinner

We celebrate summer with grilled meats and boiled corn, the golden ears arriving at the table, resting in silky pools of melted butter, ready for a dusting of freshly ground sea salt and black pepper.
Many people hunger so much for corn they eat it every chance they can to such an extent that, sooner or later, familiarity breeds disinterest and even a little disdain. 

Where it seemed so celebratory at the beginning of summer, by August they turn away when a platter of corn is placed on the table. 

That's pretty much the way it's been for me.

On my last trip to our local farmers market, I hadn't planned on buying corn until I noticed that very few farmers were selling corn and those that were had very little to sell. Arriving late, the corn was almost sold out. 

Talking with a farmer, I learned that local corn will disappear from the market in a couple of weeks. After that, no more corn until the spring.

I bought half a dozen ears, deciding we should have a farewell to corn dinner. Preparing the ears by grilling or boiling would still be great, but I wanted to do something different. 

At Cuban restaurants in New York, corn on the cob is served with butter, mayonnaise and grated cheese. The sweet chewy corn kernels benefit from those added flavors.

I liked the idea of a topping on the corn but decided on a different direction. 

Corn on the Cob with Garlic-Onion Crisps
Serves 4

Time 30 minutes

Ingredients

4 ears corn, husks and silks removed, washed and dried
1 tablespoon sweet butter
1 tablespoon olive oil
1 medium yellow onion, ends and skin removed, finely sliced
2 garlic cloves, skins removed, finely chopped
1/4 cup Italian parsley, leaves only, left whole or finely chopped
Sea salt and pepper

Directions
The corn can either be grilled or boiled. To grill, lightly drizzle each ear with a small amount of olive oil and season with sea salt and pepper. Place on a hot grill and turn frequently until lightly browned.  If boiled, place the ears of corn in a large pot of water, turn the heat on high, turn the corn frequently and remove when the water boils. Keep warm.

Heat the butter and olive oil in a frying pan. On a medium high flame, sauté the onions, garlic and parsley until lightly browned and crispy.

Cut the corn into 2" long sections, place on a serving platter. Sprinkle the onion-garlic-parsley crisps over the corn and serve.

Variations

Add heat to the sauté with 1/4 teaspoon cayenne powder.

After topping the corn with the sauté, dust the corn with freshly grated Parmesan cheese.

The Easiest Pasta You’ll Ever Make Using Grilled Corn and Roasted Garlic


On a recent trip to Sonoma County, my wife and I wandered from the coast to the inland farmland to eat our way across one of America's most productive valleys. We were lucky enough to have some wonderful meals. We especially enjoyed chef Josh Silvers' 
We loved his roasted garlic-butter sauce on his grilled corn, I was inspired to write a recipe that adapted that flavor combination with pasta.  I posted the recipe on Zesterdaily.

Grill, Baby, Grill: An Easy Summer Pasta with Grilled Corn and Black Kale

Now that corn has reappeared in the farmers' markets, it's time to grill, baby, grill.

Boiled corn slathered with sweet butter and seasoned with sea salt and pepper is delicious.  So too is grilled corn where olive oil replaces butter.  Lightly browned, the kernels caramelize, adding sweetness and the hint of smoke.

Make extra, so the kernels can be removed and used in green salads, salsas, and--my favorite--pastas.

Tuscan or black kale is widely available in the farmers' markets in large, inexpensive bunches.

Adding in mushrooms, onions, garlic, a pat of butter and you're ready to enjoy a delicious lunch or dinner that needs little more than a simple romaine or arugula salad, a glass of wine or an ice cold beer, and you'll have a memorable meal with no more effort and time than it would take to order take out.

Pasta with Grilled Corn and Black Kale

Yield: 4 servings

Time: 30 minutes

Ingredients

2 ears of corn, husk and silks removed, washed
2 links, Italian sausage, washed (optional)
1 medium yellow onion, washed, skin removed, root end and top cut off and discarded, roughly chopped
2 garlic cloves, skins removed, finely chopped
1/2 pound shiitake or brown mushrooms, washed, dried, sliced
1 bunch Tuscan or black kale, washed, center stem removed, leaves roughly chopped1/2 box DeCecco pasta, gnocchi, penne, spaghetti, or bowties
1 tablespoon sweet butter
1 cup pasta water
1/4 cup olive oil
Sea salt and black pepper
Grated Parmesan or Romano cheese

Method

If a grill is not available, preheat the oven to 350 degrees.  Pour the olive oil on a flat plate. Season with sea salt and pepper.  Roll the corn through the seasoned oil to coat.  Put on the grill or into the oven, turning every 5 minutes to prevent burning.

Do the same with the Italian sausage.  Roll in the seasoned olive oil and grill or roast.  For vegetarians, don't bother with the sausage.

While the corn and sausage are cooking, put a large pot of water on a high flame, seasoned with 2 tablespoons of kosher or sea salt.  Don't use ordinary table salt which has a metallic flavor.

While the pasta water is heating, saute the onions, garlic, mushrooms, and kale until softened.  If you want the kale more pliable, add 1/4 cup of water and braise for 5 minutes on a medium-high flame.

Put the pasta into the boiling water and stir every couple of minutes to prevent sticking.  Use the whole box if you want more pasta.

Cut the kernels off the corn and discard the cobs.  Finely chop or cut into rounds the Italian sausage. Add to the kale, together with the sweet butter.  Toss well.

Taste the pasta.  Drain and reserve 1 cup of pasta water.  Put the pasta back in the still warm pot, drizzle with olive oil and season with sea salt and pepper.  Toss well.  Set aside.

Add 1/4 cup of the pasta water to the vegetables and sausage.  Stir well and taste.  Adjust seasoning as desired.  If more sauce is desired, add a little more of the pasta water.

Pour the cooked pasta into the saute, toss well, adding another 1/4 cup of pasta water.  Serve in a large bowl, accompanied with freshly grated cheese.

Variations

Grill or roast a red pepper, discard the seeds and skin, finely chop, add 1/4 cup to the saute.

Add 2 tablespoons chopped, pitted green olives to the saute.

Now & Later Meals: Grilled Corn Has a Second Act as a Salad

Besides outdoor grilling, days at the beach, fried chicken, ripe tomatoes, and ice cold watermelon, corn on the cob is one of the great markers of summer.

When I was growing up, my mom loved to search out road side stands that sold fresh corn. She'd buy a grocery bag full and we'd feast on boiled corn with slabs of melting butter, seasoned liberally with salt and pepper.

I still enjoy corn that way, but now more often than not our corn on the cob comes to the table grilled not boiled.

Shucked and drizzled with olive oil, seasoned with sea salt and pepper, then turned on a grill until lightly browned, the naturally sweet kernels are sweetened even more by caramelization. Yumm.

For a snack, nothing is better than an ear of corn pulled from the refrigerator. But there's more that can be done with those grilled ears of corn. Cutting the kernels off, they can go into a chopped salad and move from side dish to entree.

And on hot days, that's another marker of summer--putting meals on the table with as little effort as possible.

Later: Grilled Corn and Chopped Vegetable Salad

NOW: Grilled Corn on the Cob

The most important part of this recipe is the corn itself. The fresher the corn, the better the taste. When you're picking out corn, select ears that have green husks and golden silks.

Yield 4 servings plus left-overs (which you will need for the LATER recipe)

Time 15 minutes

Ingredients

8 ears of corn, shucked, silks removed, washed
3 tablespoons olive oil
Sea salt and pepper

Directions

Preheat the grill.

Break the ears in half or cut into 3" lengths. The ears you're saving to make the salad can be left whole. Pour the olive oil onto a large plate. Season with sea salt and pepper. Roll each piece of corn in the oil.

Using tongs, grill the corn on all sides until lightly browned. Remove from the grill and serve hot.

LATER: Parsley-Corn Chopped Salad

The salad can be prepared ahead and refrigerated but it tastes better if served at room temperature.

Yield 4 servings

Time 15 minutes

Ingredients

3-4 ears of grilled corn
1 large bunch Italian parsley, washed, finely chopped
1 garlic clove, skin on
1 tablespoon yellow onion, finely chopped
1 carrot, washed, peeled, roughly chopped
2 tablespoons olive oil
1/4 cup balsamic vinegar
Sea salt and pepper

Directions

Put the balsamic vinegar in a small saucepan and reduce by half over a low flame. Set aside to cool.

Using a sharp knife, cut off the kernels and put into a mixing bowl. Place the garlic clove on a skewer or the point of a sharp knife. Char in a flame so the skin burns off. Brush off any bits of burnt skin and roughly chop the garlic.

Add the charred garlic, parsley, and onions to the mixing bowl. Drizzle with the olive oil and reduced balsamic vinegar. Season to taste with sea salt and pepper.

Transfer to a serving dish.

Variations

Instead of using a raw carrot, grill a carrot cut into slabs 1/4" thick; dredged the slabs in seasoned olive oil and grill until lightly browned; let cool and chop into pieces the same size as the corn kernels; add to the salad

Grill asparagus dredged in seasoned olive oil, then chop into pieces and add to the salad

Quarter cherry tomatoes and add to the salad

Add 1 cup cooked couscous

Add 1 medium sized avocado, peeled, roughly chopped

Add 6 medium sized shrimp, washed, peeled, deveined, and grilled, roughly shopped

Crumble 3 pieces of crisp bacon on the salad and toss

Shred 1/2 cup turkey or chicken breast and add to the salad

From Los Angeles to UC Davis with a Stop at San Francisco's Ferry Plaza Farmers' Market

On our way to UC Davis for our son Michael's freshman orientation, we first went to San Francisco. Taking I-5 we drove straight up the Central Valley with its seemingly endless miles of rich farmland, passing truck after truck filled to overflowing with California's bounty: tomatoes, cantaloupes, watermelons, squash, lettuce, onions... Like most Californians we love being on a road trip but nowadays we don't have the luxury of time so we usually fly when we travel. For this trip we had set aside five days and we relished a rare opportunity to get in the car and hit the road.
In San Francisco we stayed with Michelle's cousin Marii, her husband Ron, and their daughter Claire. Their house is in the Marina so we could take walks along the Bay within sight of the Golden Gate Bridge. Ron is a great cook and we decided that one night he, Michelle, and I would cook dinner for Michael, Marii, and Claire.
Saturday morning, while Michael slept in, we went to the Ferry Plaza Farmers' Market to prep the meal.

The last time I shopped at the market I was working for San Francisco based DotComix, a web animation site that imploded when the internet bubble popped in 2000. At that time, the farmers' market was across the street from the Ferry in a small parking lot. Now the market encircles the Ferry building and fills the Plaza on the southern end, giving the shoppers a clear view of the Bay Bridge.

For an appetizer Ron was going to barbeque skewers of Wagyu beef he'd ordered on-line from ADiRECT Foods. The night before we'd eaten at a neighborhood Japanese-fusion restaurant called Umami. We talked a lot about what created that extra flavor ("umami") that is neither sweet, bitter, sour, salty but something more. We knew using mushrooms was one way to create that extra flavor. At the market he found fresh morels that he wanted to try with the beef. For our part Michelle and I wanted to keep dinner as summer-friendly as possible so we focused on buying ingredients we could grill and use for salads. Dessert would be a Banana-Chocolate Chip Walnut Cake I'd made at home.

There were stand-outs at the market: large bunches of watercress from White Crane Springs Ranch, peaches and nectarines from Frog Hollow Farm, and Ella Bella Farm's broccoli di cicco (sprouted broccoli). We also bought corn, tomatoes, arugula, and Italian parsley. The market is such a treat. Even if you didn't need to shop, walking through the crowds and enjoying the visual experience of the waterfront setting is more than enough reason to come to the market.

Ironically we would have missed one of the best parts of the market if the forest fires weren't raging in California and Nevada. We were just about finished shopping when we were surprised to see our friends Val and Florence. They live a block away from us in LA. Florence is one of the most accomplished cooks I know. There was no one better to give us tips about the market. They were two days into a week-long vacation in Reno when the forest fires came close enough that they had to leave, as Val put it, "because it was raining ash." Having traveled frequently to San Francisco, Florence knew where to buy the best peaches--Frog Hollow Farm--and which vendors had the best prepared food.

We hadn't planned to eat at the market because we were on our way to Sausalito to have lunch with friends, but Florence insisted that we couldn't leave without sampling her favorites. Luckily there were four of us to share. There was lox, cream cheese and a slice of thick-cut tomato on sourdough bread topped with red onions and lavender sea salt from Cap'n Mike's Holy Smoked Salmon, toastadas de ceviche with shrimp and avocado from Primavera, and RoliRoti's porchetta sandwich, the crispy pork sliced to order by chef-owner Thomas Odermatt. Florence told us that the porchetta sandwich was just like the ones she loved in Rome. For us the porchetta sandwich was a highlight of our trip. With napkins in hand and our stomachs full, we thanked Florence and Val for their much-appreciated advice.

Claire had patiently endured our extra time at the market. We owed it to her to finish shopping quickly. While she ate a breakfast muffin from Downtown Bakery, I picked up a chicken from the Golden Gate Meat Company and a piece of Capricious cheese from Achadinha Cheese Company.

Later that afternoon Ron, Michelle, and I cooked our dinner, which included grilled chicken, sausages, and vegetables; a summer drink of white rum, mint, and limes that combines the best of a Mojito and a Caipirinha; Ron's skewers of Wagyu beef and morels were amazing, the morels' earthiness perfectly complimented the meat's buttery sweetness; chopped liver and egg salad; grilled lavash; arugula and carrot salad; chopped salad; watercress with grated Capricious cheese; and the banana chocolate chip walnut cake.
We had a wonderfully leisurely dinner with time to catch up about family, tell jokes, and talk about favorite movies. As a reward for my helping cook dinner, Claire made me a drawing in recognition of my "hard work and generosity." Appreciation is a great gift for anyone who cooks.

Of all the dishes we made, what Marii liked best was the chopped salad with grilled vegetables and Italian parsley. There will be more about the rest of the dinner in subsequent posts, but I wanted to start with Marii's favorite dish.

Summer's Best Chopped Salad

A salad with an infinite number of variations.

Yield 4 servings
Time 45 minutes

Ingredients

2 bunches Italian parsley (washed, finely chopped, leaves and stems)
1 large avocado (peeled, pit removed, roughly chopped)
4 carrots (washed, peeled, cut into 1/4" thick, 2" long slabs)
2 scallions (washed, ends trimmed)
4 ears of corn (husks and silks removed, washed)
1/2 pound broccoli (washed, ends trimmed, stems peeled, florets cut into 1/4" thick, 2" long slabs; if using sprouted broccoli grill whole)
1/2 pound string beans (washed, ends trimmed)
3-4 tablespoons olive oil
1/2 cup balsamic vinegar
Sea salt and pepper

Method

Put the chopped parsley and avocado into a large mixing bowl. Heat a barbecue grill. Drizzle olive oil on the vegetables, season with sea salt and pepper. Grill 5-10 minutes until lightly brown. If you don't have a grill, you can accomplish a similar result in a 350 degree oven. Turn frequently in either case so the vegetables don't burn. Remove and let cool.

Reduce the balsamic vinegar in a saucepan on a low flame until you have a quarter of the original volume. The vinegar will become sweet.

Finely chop the grilled vegetables, add to the parsley, drizzle with olive oil and reduced balsamic, season to taste with sea salt and pepper. Toss well and transfer to a salad bowl.

Variations

Keep the salad vegetarian and grill any vegetable you enjoy, like squash, asparagus, onions or mushrooms, chop, and add to the salad.
Add grilled meats like Italian sausage or chicken or shellfish like shrimp, lobster and crab.

Add cheese such as crumbled feta, finely chopped comte, mozzarella, Swiss or cheddar.
Add chopped olives.
Add chopped salami.
Add chopped grilled eggplant.

Add chopped artichoke bottoms.

Add chopped hardboiled eggs.

Add homemade croutons.

Add chopped roasted beets.

Farmers' Market Fast Food

We have a Sunday routine. Our friends Annette and Ron come over. We watch 60 Minutes, catch up, and have dinner. Last Sunday I didn't think they could make it because they'd been in Japan all that week. I assumed that if they were back in town they were probably jet lagged and wouldn't want to leave the house. But I didn't want to break the weekly tradition, so I emailed them anyway that if they were up for it, Sunday dinner was still happening. Then I went about my business and forgot completely about the invitation.

30 minutes before they would normally come over, Ron called to say that they would be arriving as usual. Knowing that they're usually a half hour late, I had an hour to make dinner.

That's where the farmers' market comes into play. For my mother's generation quickly pulling together a meal meant using prepared foods, canned or frozen. Because we shop at our local farmers' market, we always have a good selection of fresh vegetables and fruit in the refrigerator.

That morning I had picked up flowers for the dining room table and fresh corn, carrots, Haas avocados, scallions, cantaloupe, and romaine lettuce.

From what I had bought at the farmers' market, I made a salad, corn on the cob, and cut up a cantaloupe. I added a feta cheese-tapenade appetizer plate with olives and a fresh bread from Bay Cities in Santa Monica and I pulled out a banana chocolate-chip cake I'd made a few days ago. I could have stopped at that point. We had a full meal, vegetarian except for the salami in the salad, but our friends needed protein after their long trip so to fill out the meal, I grilled a rib-eye steak and a half dozen lamb chops.

The heart and soul of the meal was the farmers' market produce. Making the whole meal only took 45 minutes. Everything was ready when Ron and Annette arrived, jet lagged and very hungry.

Romaine Lettuce with Julienned Salami, Cheese, & Carrots

Yield 4 servings
Time 10 minutes

The felino salami and comte cheese came from Bay Cities. I recommend both.

Ingredients

2 hearts of romaine (washed, dried, cut into bite sized pieces)
2 tablespoons felino salami (julienned)
2 tablespoons comte cheese (julienned) cheddar or swiss would be good as well
2 tablespoons croutons (homemade preferred)
2 tablespoons carrot (washed, julienned)
1 scallion (washed, thin sliced, green and white parts)
1/2 small avocado (peeled, roughly chopped)
3 tablespoons olive oil
1/4 cup balsamic vinegar
Sea salt and pepper

Method

Heat the balsamic vinegar in a small saucepan over a low flame until reduced to 1 tablespoon. Let cool.

Put the ingredients in a salad bowl, dress with the olive oil and reduced balsamic vinegar, and season with sea salt and pepper to taste.

Corn Goes from Grill to Salad Bowl

When the weather warms up, I happily trade the stove for the barbecue. What a pleasure to be cooking outdoors. The heat blasting off the grill. The trees and sky overhead. I just love it.

We grill a lot of vegetables. Corn is one of our favorites. Besides enjoying corn on the cob, with very little effort the grilled corn makes a terrific salad.

Grilled Corn
Yield 4 servings
Time 20 minutes

4 ears of corn, silks and husks removed, washed
Olive oil
Sea salt and pepper

Drizzle the corn with olive oil, then season with sea salt and pepper. Put on the hot grill. Turn frequently with tongs to avoid burning. Charing adds to the flavor, but just a little bit. Serve hot off the grill by itself or as a side dish.

Grilled Corn Salad
Yield 4 servings
Time 10 minutes

4 ears of corn, grilled
1 bunch Italian parsley, washed, leaves only, finely chopped
1 scallion, washed, ends removed, finely chopped
Olive oil
Sea salt and pepper

Use a sharp knife to remove the kernels. In a bowl mix together the corn, parsley, and scallion. Drizzle with olive oil and season with sea salt and pepper. Toss well and serve at room temperature.

Variations

Use cilantro instead of Italian parsley.

Add sautéed onions and garlic, lightly browned in olive oil.

Add bell peppers, red, yellow, or green--raw is good; if grilled, remove the skins--chopped the same size as the corn kernels.

If Corn is Back It Must Be Summer

Living in Southern California, we're frequently accused of being citizens of LALA land, a region of delusions where the inhabitants have lost touch with nature because there are no seasons. But there are seasons. Our winters are cold. Those of us with fireplaces use them frequently from January through March. And yet we have to admit, we don't suffer the ravages of weather that afflict other parts of the country.

If T.S. Eliot's J. Alfred Prufrock measured out his life with coffee spoons, we Angelinos keep track of the seasons by watching the ebb and flow of the produce in the farmers' markets. We know summer is over because the peaches and nectarines are gone. Conversely, when the first corn appears at the farmers' markets, we know that winter is definitely over.

Several weeks ago a few pieces of corn were for sale at the Palisades Sunday market. Then yesterday at the Santa Monica Farmers' Market, a giant mound of corn materialized at Gloria's Fruits & Vegetables stand. Seeing so much corn a dozen recipes came to mind, but the best way to celebrate the return of corn is the simplest: corn on the cob with a slab of butter, seasoned with sea salt and pepper. One taste and we know for certain that summer's back.

Corn on the Cob

4 ears of corn, shucked, washed
2 tablespoons sweet butter
Sea salt and pepper

Leave the cob whole or break in half, put into a large pot of water, and turn the burner on high. When the water boils in 10-15 minutes, the corn is done. Drain and serve with butter, sea salt, and pepper.

Serves 4. Preparation Time: 5 minutes. Cooking Time: 10-15 minutes.
